Serve this salsa the day you make it. Add extra jalapeno peppers and some of the seeds if you like it spicy. Drain the chopped tomatoes in a sieve set over a bowl for several minutes if you like your salsa a bit thicker.
3 cups chopped fresh ripe tomatoes
1/2 cup diced onion
1/2 cup finely diced green pepper
1/2 cup finely diced red pepper
2 tablespoons minced fresh cilantro
1-tbsp fresh lemon juice
1-tbsp fresh lime juice
1/2 finely diced jalapeno pepper
1 tsp white vinegar
1/2 tsp coarse salt
Fresh ground black pepper
Combine all ingredients and toss gently to combine. Serve immediately or refrigerate for a couple of hours to allow the flavours to come together. Makes approximately 4 cups
Variation: Peach Salsa, add 3/4 cup chopped firm peaches.
